So this week I got to taste Beetroot soup.

Beetroot is high in vitamin C which as we all know is fantastic for the immune system and cold fighting ability. Beetroot is a good source of iron and folate (naturally occurring folic acid). It also contains nitrates, betaine, magnesium and other antioxidants.


More recent health claims suggest beetroot can help lower blood pressure, boost exercise performance and prevent dementia.


This soup was hearty and did require some lovely additional seasoning such as black coarse pepper and thyme and parsley to enhance it's flavour. Definitely filling and definitely something I will be trying again.
