Our Version of Eggs Benedict.

Rummaging around the kitchen one Sunday morning completely uninspired, to put together a tasty breakfast.

I'd gotten fed up of porridge bread 
https://www.youtube.com/watch?v=jT5tuhL_M5g ) and so replaced the natural yogurt with Greek yogurt and baked porridge scones instead. Served cut in half with a generous spread of real butter.
They are delicious!

I poached some free range eggs.
The trick with getting a good poached egg is to have your water simmering not boiling, at a shallow level in the pot and crack the egg down as low and slow as you can into the water without burning your fingers tips.

I Cooked the bacon under the grill. Always gives a lovely finish of crispened fat without burning the meat.

And finally a sliced avocado. Make sure it is ripe (black skin on the outside).

And serve!

This breakfast is very tasty but it is also full of good fats which will help to keep you fuller for longer. It's in the egg, butter, avocado and bacon.

It's got protein in the egg avocado, bacon and the Greek yogurt used in the porridge scones, which is also proven to keep you full for longer periods without causing any energy spikes or lows. Just slow releasing energy.

The avocado alone has a unique nutritional make up. It contains lots of fiber and is rich in B vitamins, vitamin K, potassium, copper, vitamin E and C. So maybe try sneak one or two into other meals in the week.
